Incredibly Simple Cardamom Chia Pudding

This chia seed pudding is the perfect dessert when you want something a bit sweet, but don’t want the richness of chocolate. Inspired by my love of Indian rice pudding, I added cardamom and raisins to give it that distinct flavor. 

Hands-on time: 5 minutes, Unattendted time: 30+ minutes 

Ingredients:

  • 1 1/2 c. full fat canned coconut milk
  • 1/4 c. chia seeds
  • 1 tbsp. maple syrup
  • 1/2 tsp. vanilla
  • 1/2 tsp. cinnamon
  • 1/8 tsp. cardamom
  • a pinch of salt
  • 1 scoop collagen peptides powder (optional for protein)
  • 1 tbsp. raisins + slivered almonds (optional)
Combine all ingredients in jar and put in refrigerator for 30 minutes or more. 30 minutes will yield a thinner pudding, while letting it sit overnight will give you a much thicker consistency. This is great for dessert or breakfast!
